The sun shone so brightly in the front window today, I began to sweat as I drank my morning coffee. It is a treasure to have such beautiful spring weather returning. I do love winter, as I love all the seasons, but the shift from one season to another is my favourite of all.
Our fridge, freezer, and pantry are all nicely full. However, I stopped buying snacks from the grocery store because I noticed they all seem to have chocolate or caramel or something else in them, even the simple coconut cookies and granola bars. I decided, apart from simple rice cakes and arrowroot cookies, I’d make my own snacks for the next while.
Yesterday, I made apple chips. You can find how I did it here. Funny enough, we had blizzard-like snow conditions after I wrote that post, despite how beautiful it was yesterday morning. It makes me wonder what this afternoon will be like.
Unlike yesterday, I did not wait until later in the day to get my baking done. I made Nova Scotia oak cakes and apple sauce this morning. This evening, I’ll make spaghetti for dinner. I don’t make it often, as I don’t care for spaghetti, but my husband likes it.
He tends to be a pickier eater than I, so I was impressed when he said he liked the Nova Scotia oat cake I made. I will certainly be making it again, too. Though, I think I’ll try it with an egg or two instead of the oil to see if it helps the cake bind better without compromising taste. It should add some extra protein to the cake, too.
I suppose you could also add peanut butter, raisins, dried cranberries, or chopped nuts, too. They would all likely taste good in the cake!
Here is the recipe I followed:
Nova Scotia Oat Cake
- 2 cups Quick oats
- 1 cup Flour
- 1/2 cup Brown sugar
- 1/2 cup Oil or melted butter
- 1/2 tsp Salt
- 1/4 tsp Baking soda
- 1/4 cup Hot water
Dissolve the baking soda into the hot water. Then, mix everything together. Press it into a cake pan until its about 1/4 inch thick across. Then, chill it for 10-15 minutes. Score the chilled dough for easier cutting after it’s cooked – you can make 8-10 squares with it. Bake it at 400F for about 15 minutes. Remove it from the pan to cool it.
I ate it warm with a cup of coffee! I suggest enjoying it with coffee or tea, as it can be a little dense on it’s own. 🙂
I do not have any photos of it, as I’m working purely on writing right now. I’ll get down to photographing another time, when I feel like it!
It’s time for me to begin the challenge of folding laundry. I’ve said for the past two weeks I’ll get through our mountain, but I haven’t. I think part of it is that I need to declutter some of our clothes. Our winter clothes no longer need to take up space in our wardrobes, and some stuff can certainly be donated.
The other part of it is that I’ve let it get away from me and now it feels like such a huge task! When that happens, I simply focus on getting something done every day until I get through the entire task. Then, I get back into a good daily routine so it doesn’t get away from me again. For laundry, that’s typically washing one load and folding what’s in the dryer so I can dry the day’s load, too.
It keeps it simple… when I stay on top of it! Damn this cold for setting me so far back, ha-ha. I’ll get there.
